Moby Dick Ambergris Ale
Ambergris being prepared for tincturing
Our newest limited release is a very special ale made with a very special ingredient: ambergris – commonly, and somewhat mistakenly, known as ‘whale vomit’.
This ale was brewed as a festival beer for the GABS 2016 beer festival. It is an imperial amber ale infused with ambergris. Moby Dick Ambergris Ale 7.4% a/v.
The result is a pungent, animalistic aroma, musky ethereal perfume, full body, caramel malt and fruity flavours, very balanced bitterness.
An imperial amber ale being brewed for the Moby Dick recipe
Though the aroma may not be for the faint-hearted, and the beer isn’t exactly vegan-friendly, the ambergris perfume adds another dimension to this unique tasting experience.
Ambergris comes from the bowels of a sperm whale and has been a prized commodity, worth almost its weight in gold, used most commonly around the world in the perfume industry. In Medieval times it was used as a flavouring for cooking and to lift the flavour of wines and brandy.
Ambergris is understood to be a secretion that forms in the gut of a sperm whale to assist with digestion. It may be regurgitated, excreted, or washed out from a decomposing whale and then typically floats on the oceans curing for decades, the longer the better.
